Oh, but I can my fellow viewer...
A simple combination of reasoning and imagining.

So, Toph started out very short, and it is said that short people eventually grow to an over-average length.
Also, since she doesn't seem to get her hair cut, or even cleaned for that matter, it will grow too long to remain in this bun, so it will have to be a ponytail of hair down.
Then there's the fact she trains a lot, yet not with too much effort, so she'll have a slightly over-average muscle amount.
Further development doesn't need mentioning I think, as it speaks for itself.

Now, I'll just stop this before I faint, LOL.
